The trick with this recipe is to make the sauce and then cook the Meatballs from raw in the sauce.
That way the meatballs soak in all those Yum flavours from the sauce.
One of the great things about this recipe is I can remove the meatballs and just use the delicious sauce for my youngest child who’s not a fan of meat.
To make this dish You’ll need:
500g of Ground Beef (preferably made from organic, grass fed beef)
2 onions (1 medium, 1 large)
1 tomato (grated)
1 can of whole peeled tomatoes (puree in a blender)
1 large handful of fresh coriander (cilantro)
7 cloves of crushed garlic
Sprinkle of dry oregano
Olive oil to saute onions in (you can also make this oil free)
Make the meatball mixture first:
Grate the medium onion and add to it the grated tomato, a sprinkle of dried oregano, finely Chopped coriander, 3 cloves of crushed garlic and salt. Mix well.
Add the ground beef and mix well with a fork. (Do not use hands to mix as this ruins the texture of the meatballs)
– Cover the meatball mixture and make the sauce
To make the sauce:
Saute the large onion (finely Chopped)
Add the rest of the garlic (4 crushed cloves) saute briefly then add the pureed whole peeled tomatoes and salt to taste
Add a touch of dry oregano
Turn the heat down on low and simmer for 5 minutes
Once the sauce has cooked for 5 minutes, roll your ground beef into balls and place in the sauce.
Keep the heat on low.
After 3 minutes, gently turn the meatballs or scoop sauce onto the meatballs to ensure the meatballs are flavoured evenly.
Cover and allow to simmer for 15 minutes or until meatballs are cooked through.
When ready, serve with a big green salad along with organic spaghetti, wheat free pasta or rice.
