Delish Vegan Avo Mayo

Every now and then I love a good sandwich.

I don’t eat bread much so when I do, boy do I make it count!

For this (super simple) Vegan version of a yummy mayo-like filling, you’ll need

1 Ripe Avo (de-seeded)

1/4 Cucumber (chopped)

A small piece of Red Onion (chopped)

Juice of half a lemon

1/2 teaspoon of apple cider vinegar

1tbsp extra virgin olive oil

Fresh coriander (chopped) (for garnish)

Freshly ground black pepper

Optional: Salt to taste

How you’ll make it

Add all all your ingredients together and mix with a fork.

And… voila! Your avo mayo is ready.

I love it with some sourdough breadĀ topped with freshly chopped coriander
